Gluten-Free Coconut Flapjacks:

Ingredients:

1 scoop Vanilla-flavoured Slender Snack MRP
1 teaspoon Baking Powder
80g (approximately 95 ml) Coconut Flour
1/4 teaspoon Salt
4 large Egg Whites
180ml Coconut Milk
30ml Water
30ml Extra Virgin Coconut Oil


Instructions:

In a large mixing bowl, sift together the Vanilla Slender Snack MRP powder, baking powder, coconut flour, and salt.

In another bowl, mix the egg whites, coconut milk, water, and melted extra virgin coconut oil until well combined.

Slowly add the wet ingredients to the dry ingredients, whisking continuously until you achieve a smooth batter. Let the batter stand at room temperature for 15 minutes.

Brush the bottom of a heavy skillet or pancake griddle with coconut oil and set it over medium heat (approximately 180°C). Heat until a drop of water sizzles and evaporates immediately.

Stir the batter, and then pour approximately 1/4 cup (60 ml) of batter into 4-inch (10 cm) circles on the skillet, allowing plenty of space between each flap jack.

Cook until bubbles form on the surface and the edges are cooked. Flip the pancakes to cook the other side.

Serve the flap jacks immediately, topped with your choice of fresh berries and honey.
