Ingredients:

- 1 medium or half of a large bell pepper, sliced into thin strips (julienned)
- 8 radishes, sliced into thin strips (julienned)
- 1–2 celery stalks, thinly sliced
- 1 apple, cut into thin strips (julienned)
- Fresh herbs (green onions, dill, parsley), finely chopped
- 4–5 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar (optional; alternatively, use honey)
- Salt and pepper, to taste
Instructions:
- Vegetable Preparation:
- Finely slice the cabbage.
- Grate the carrot.
- Slice the cucumbers, bell pepper, and radishes into thin strips.
- Thinly slice the celery.
- If preparing in advance, cut the apple right before serving or soak the apple slices in water with lemon juice.
- Combining Ingredients:
- Mix all the vegetables until evenly combined.
- Season with salt, pepper, and sugar (if desired).
- Herbs, Oil, and Vinegar:
- Add the minced fresh herbs, olive oil, and apple cider vinegar.
- Thoroughly mix to combine.
- Refrigeration and Serving:
- Refrigerate the salad.
- Serve it chilled or at room temperature.
